After nearly three years under the ownership of Alfonso Bustos Camarena, "That" Chicken Place at 1907 Hewitt Ave is entering its most ambitious chapter yet. The restaurant is expanding into the adjacent 1905 unit, doubling its seating capacity and positioning itself as an even more prominent fixture in downtown Everett's growing dining and entertainment scene.

The project involves opening the wall between the two units, installing matching flooring, and new pallet-built seating consistent with the restaurant's existing aesthetic. The kitchen footprint will stay the same, but the additional space will serve both walk-in diners and private events, with the location across the street from Angel of the Winds Arena making it a natural destination on concert and event nights.

Alfonso is prioritizing proper permitting and quality contractors over speed. There's no official completion date, but the work is actively underway and he hopes to open the expanded space within the next few months. In the meantime, you'll see the now famous logo in the window - a chicken's head on a phoenix's body, with circular design elements representing Alfonso's Mexican heritage.

The expansion will require faster service, and Alfonso is clear-eyed about the challenge — because everything at "That" Chicken Place is made fresh. His sourcing reflects a genuine investment in the Everett community: locally-raised organic chicken, produce from area suppliers, a locally-mixed michelada, and sandwich buns from local bakeries. The buns, in particular, are something customers feel strongly about.

A new menu will accompany the expanded space: antojitos along with fresh-cut fruit, limes, and sauce, "how we eat it back in Mexico." With the FIFA World Cup coming this summer, Alfonso plans to broadcast matches on the restaurant's televisions. Guests can also enjoy alcoholic beverages in the roped-off sidewalk seating area, and sealed drinks are available to go.

Commitment to Community

Alfonso's vision for the restaurant goes beyond food. His message to Everett residents is to invest in one another shop at local businesses, support neighbors, and recognize the strength in community ties. "The community has our back, and we have their backs as well."

He also spoke directly about the concerns over ICE enforcement. "That's something that's always on our mind, and we try to prepare our employees and community," he said. He describes the restaurant as a safe space, while acknowledging the limits of that assurance. "You just never know what could happen, even if you do everything right, you can still be targeted." His message to those who are scared is reassuring, "As long as we pray, and support each other, letting everyone know they're not alone — together we're stronger — not to fight, but to defend ourselves."
